This is ideal with kebabs (we like it with Mint Kebabs), though it also goes well with fried chicken etc.

Ingredients

  • 2 large English cucumbers or 4 small Persian cucumbers, finely diced/sliced
  • 1 cup full-fat Greek or plain yogurt
  • 1-2 garlic cloves finely minced
  • 1 tbsp fresh mint finely chopped
  • 1 tbsp lemon juice or fresh lime juice
  • ½ tsp chili powder red pepper flakes, or cayenne (adjust to your preferred spice level)
  • ½ tsp sea salt plus a pinch to salt the cucumbers
  • Extra-virgin olive oil for drizzling

Instructions

Prep the Cucumbers:

  • Sprinkle diced cucumbers with a pinch of salt and place them in a colander for 15-20 minutes. (This draws out excess water so the salad stays thick and creamy).
  • Press the cucumbers firmly to drain the liquid.

Make the Dressing:

  • In a medium bowl, whisk together the yogurt, minced garlic, lemon juice, chili powder, and salt until smooth and combined.

Combine:

  • Fold the drained cucumbers and the chopped fresh mint into the yogurt dressing.
