Black Pudding Egg and Bacon Hash
Black Pudding Egg and Bacon Hash (with Spinach, Asparagus and Tomatoes)

- Air Fryer
Ingredients
- 200 g black pudding sliced
- 150 g spinach chopped
- 150 g asparagus trimmed and cut into 2-inch pieces
- 200 g plum tomatoes halved
- 4 eggs
- 4 slices of bacon chopped
- Olive oil for drizzling
- Salt and pepper to taste
Instructions
- Prepare the Air Fryer: Preheat the air fryer to 180°C (360°F) for about 5 minutes.
Cook Bacon and Vegetables:
- Place the bacon in the air fryer basket and cook for 3-4 minutes until it starts to crisp up. Remove and set aside.
- In the same basket, add the asparagus and plum tomatoes. Drizzle with a little olive oil, season with salt and pepper, and air fry for 5-6 minutes until slightly charred and tender. Remove and set aside.
Cook Black Pudding and Spinach:
- Place the sliced black pudding in the air fryer basket and air fry for 4-5 minutes until crispy on the outside. Remove and set aside.
- Add the chopped spinach to the basket, drizzle with a bit of olive oil, and air fry for 2-3 minutes until wilted. Remove and set aside.
Assemble the Breakfast Hash:
- In a serving dish or individual plates, layer the cooked black pudding, spinach, asparagus, plum tomatoes, and crispy bacon.
Cook Eggs:
- Crack an egg over each assembled plate of ingredients.
- Return the plates or dish to the air fryer and cook for 4-5 minutes or until the egg whites are set but the yolk is still slightly runny.
Serve:
- Carefully remove the plates from the air fryer and serve your flavorful breakfast hash immediately.
