Ingredients

  • 200 g black pudding sliced
  • 150 g spinach chopped
  • 150 g asparagus trimmed and cut into 2-inch pieces
  • 200 g plum tomatoes halved
  • 4 eggs
  • 4 slices of bacon chopped
  • Olive oil for drizzling
  • Salt and pepper to taste

Instructions

  • Prepare the Air Fryer: Preheat the air fryer to 180°C (360°F) for about 5 minutes.

Cook Bacon and Vegetables:

  • Place the bacon in the air fryer basket and cook for 3-4 minutes until it starts to crisp up. Remove and set aside.
  • In the same basket, add the asparagus and plum tomatoes. Drizzle with a little olive oil, season with salt and pepper, and air fry for 5-6 minutes until slightly charred and tender. Remove and set aside.

Cook Black Pudding and Spinach:

  • Place the sliced black pudding in the air fryer basket and air fry for 4-5 minutes until crispy on the outside. Remove and set aside.
  • Add the chopped spinach to the basket, drizzle with a bit of olive oil, and air fry for 2-3 minutes until wilted. Remove and set aside.

Assemble the Breakfast Hash:

  • In a serving dish or individual plates, layer the cooked black pudding, spinach, asparagus, plum tomatoes, and crispy bacon.

Cook Eggs:

  • Crack an egg over each assembled plate of ingredients.
  • Return the plates or dish to the air fryer and cook for 4-5 minutes or until the egg whites are set but the yolk is still slightly runny.

Serve:

  • Carefully remove the plates from the air fryer and serve your flavorful breakfast hash immediately.
