Ingredients
200gblack puddingsliced
150gspinachchopped
150gasparagustrimmed and cut into 2-inch pieces
200gplum tomatoeshalved
4eggs
4slicesof baconchopped
Olive oilfor drizzling

Instructions
Prepare the Air Fryer: Preheat the air fryer to 180°C (360°F) for about 5 minutes.
Cook Bacon and Vegetables:
Place the bacon in the air fryer basket and cook for 3-4 minutes until it starts to crisp up. Remove and set aside.
In the same basket, add the asparagus and plum tomatoes. Drizzle with a little olive oil, season with salt and pepper, and air fry for 5-6 minutes until slightly charred and tender. Remove and set aside.
Cook Black Pudding and Spinach:
Place the sliced black pudding in the air fryer basket and air fry for 4-5 minutes until crispy on the outside. Remove and set aside.
Add the chopped spinach to the basket, drizzle with a bit of olive oil, and air fry for 2-3 minutes until wilted. Remove and set aside.
Assemble the Breakfast Hash:
In a serving dish or individual plates, layer the cooked black pudding, spinach, asparagus, plum tomatoes, and crispy bacon.
Cook Eggs:
Crack an egg over each assembled plate of ingredients.
Return the plates or dish to the air fryer and cook for 4-5 minutes or until the egg whites are set but the yolk is still slightly runny.
Serve:
Carefully remove the plates from the air fryer and serve your flavorful breakfast hash immediately.
