For the salad:
- 1 large head of Romaine lettuce chopped
- 2 Chicken Breasts air fried and sliced
- 1/2 cup croutons store-bought or homemade
- 1/4 cup grated Parmesan cheese
- 1/2 cup Black or green olives sliced
- 1 small tin anchovies thinly sliced
For the dressing:
- 1/3 cup mayonnaise
- 1 clove garlic minced
- 1-2 tablespoons lemon juice freshly squeezed
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- Salt and black pepper to taste
- 2-3 tablespoons olive oil

- Prepare the salad: In a large salad bowl, toss the chopped Romaine lettuce with the croutons, olives, chicken and Parmesan cheese.
- Make the dressing: In a bowl, whisk together the mayonnaise, minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, and anchovies. Slowly drizzle in the olive oil while whisking until the dressing is smooth. Season with salt and pepper to taste.
- Dress the salad: Pour the dressing over the salad and toss until the lettuce is well-coated.
- Serve immediately: Garnish with extra Parmesan and freshly cracked black pepper, if desired.
Tips:
- For homemade croutons, toss cubed bread with olive oil, salt, and pepper, then bake at 350°F (175°C) for 10-15 minutes until golden brown.
- You can add shrimp, or bacon for a heartier version.
