250gbeef rump steakor stir-fry strips
1tbsp15ml olive oil or beef dripping
200gbroccoli floretsfresh or frozen
2clovesgarlicminced
1tspfresh grated gingeror ½ tsp ground ginger
2tbsp30ml soy sauce
1tbsp15ml apple cider vinegar (or white wine vinegar)
½tsptoasted sesame oil
Salt & black pepper to taste
Chilli flakes to taste
Instructions
Prepare Broccoli:
Cut into bite-sized florets. If using fresh, blanch in boiling water for 2 minutes, then drain. If using frozen, microwave for 3 minutes and drain.
Cook Beef:
Slice steak into thin strips. Heat olive oil or dripping in a large pan or wok over medium-high heat. Add beef, season lightly, and stir-fry for 2–3 minutes until browned. Remove and set aside.
Stir-Fry Vegetables:
In the same pan, add garlic and ginger. Sauté for 30 seconds. Add broccoli and toss for 2–3 minutes.
Combine & Sauce:
Return beef to the pan. Add coconut aminos, vinegar, sesame oil (if using), and a pinch of chilli flakes. Stir-fry everything together for 2 minutes until well coated and heated through.
Serve Hot:
Divide between two plates and enjoy immediately.
